Sweet Potato ‘BOUNTY’ Porridge

Ingredients

  • Porridge:
  • 1 ½ cup cooked white sweet potatoes, still hot
  • 1/3 cup unsweetened shredded coconut
  • ¾ cup coconut milk / or other plant based milk
  • ½ tsp vanilla powder
  • 1-2 tsp honey/agave syrup (optional)
  • Topping:
  • 1 - 2 Tbsp melted dark chocolate
  • Coconut milk
  • Coconut flakes

Instructions

  1. Place all the porridge ingredients in a food processor and blend until smooth.
  2. Serve warm topped with melted dark chocolate, coconut milk and coconut flakes.
