CHICKPEA-ZUCCHINI PANCAKES

Ingredients

  • CHICKPEA-ZUCCHINI PANCAKES
  • 1 cup shredded zucchini
  • ½ cup chickpea flour
  • ½ cup plain dairy-free yogurt
  • 1 tsp baking powder
  • ¼ cup parsley chopped
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • black pepper
  • olive oil, for cooking
  • TAHINI YOGURT SAUCE
  • 1 cup plain dairy-free yogurt
  • 2 Tbsp Tahini
  • ¼ tsp garlic powder
  • pinch of salt
  • pinch of pepper

Instructions

  1. TAHINI YOGURT SAUCE
  2. Mix yogurt, tahini and garlic powder in a small bowl; season with salt and pepper. Cover; chill.
  3. CHICKPEA-ZUCCHINI PANCAKES
  4. Take a large mixing bowl. Add all the ingredients in the bowl, and mix well.
  5. Heat a pan on high heat. Once, the pan is hot enough, turn the heat on medium.
  6. Spread 1 tsp oil in the pan and spread 2 tbsp batter evenly on it.
  7. Cover the lid, and let it cook for about 2 minutes. Now remove the lid, and apply some more oil on the topside of pancake.
  8. Turn it upside down. Let it cook for 2 minutes, until it becomes brown and crispy from both sides.
  9. Serve with a dollop of yoghurt dipping sauce. Enjoy!
