Carrot Cake Banana Bread

What happens when carrot cake meets banana bread? CARROT CAKE BANANA BREAD! ? Healthy, deliciously soft, super moist and so easy to make! ? 




  • 1 1/2 cups spelt flour
  • 1/2 cup oats
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp nutmeg (optional )
  • 1 1/2 cup mashed overripe banana
  • 1/2 cup finely shredded carrot
  • 1/4 cup coconut sugar or agave syrup
  • 1/4 cup soya yogurt
  • 1/4 cup coconut oil
  • 1 tsp vanilla powder
  • Optional add-ins: 1/2 cup crushed walnuts/ shredded coconut /chopped raisins


  1. Preheat oven to 175 C / 350 F . Line a 9×5 pan with parchment paper. Combine dry ingredients in a bowl. In separate bowl whisk wet ingredients - including carrot and banana. Pour wet into dry, and stir to form a batter. If desired, you can add 1/2 cup crushed walnuts and/or a handful of shredded coconut and/or 1/2 chopped raisins. Transfer to a prepared pan. Bake 40 minutes. If it is still undercooked, continue baking- checking every 5 minutes–until a toothpick inserted into the center comes out mostly clean. Remove from oven and place pan on wire rack to cool for 15 minutes. Remove bread from pan and place on wire rack to finish cooling completely. Spread icing over the cake and decorate with chopped nuts if desired
